Thanks to deuterio.net (http://www.deuterio.net), my Guild Wars map guides are now visible to the whole world. That's a good thing - any help you can find through search engines is great!
For the most part, the people that have contacted me in game about these cartographer guides have been very nice, but, alas, thanks to a rare few I'm editing these to remove direct references to my contact information.

I'm very sorry I have to list all this, but it seems I do. If you do contact me and I don't answer (right away or ever) here are some common reasons why that may be.
I'm busy or afk. It's a game ... a game I play. I know it shocks some people, but my top priority in life will not always be to help complete strangers get their map titles.
You're asking me to look at your map and find the spots you're missing. Sorry, that's not a service I generally provide. There seem to be some very nice people on Guru (http://www.guildwarsguru.com/) that have tricks for image comparison. If you want someone to find the spots you're missing, that's a better place to look.
You're initial message lacks what I consider to be basic manners when first approaching someone that doesn't know you. Wait a couple days, and try again, this time remembering some of the basic concepts of politeness that your parents (should've) taught you.
Your question is about something I've already covered and answered to the best of my ability on one of these posts. The fact that you've asked leaves me with a strong suspicion that you haven't taken the time to read what I took the time to write. Without further clarification from you as to why your specific question isn't covered, I'm not likely to take the time to answer.
You're requesting me to run you someplace, tell you how to get someplace, tell you the build for getting someplace. I am not a runner, nor am I a build expert. Any place I've found unusually tricky to get to after finishing the whole game, I've made note of on these posts. If you can't be bothered to really go out and explore, then I don't really need to help you get the Grandmaster Cartographer title.
I assure you that repeated messages akin to "dude wtf answer me already u damn noob!" will only serve to guarantee I add you to my ignore list.
Again, I apologize to the vast majority of people out there that I had to put such a disclaimer up in the first place. I hope everyone that wants the GMC titles has a terrific time exploring such wonderful worlds.

Well I know that Cantha isn't as interesting as Tyria to most of us here, but that doesn't let me out of getting my money's worth from the game. So here's the Canthan Grandmaster post. (I hit 100% last night, Oct 10, 2006.)

I won't go into the general mapping tips that I already covered in the Tryian Grandmaster Cartographer post (http://www.deuterio.net/showthread.php?t=3693) just some notes specific to Cantha.
Credits still to all my friends for their help and encouragement. Since last time, additional thanks goes to Vic (for resisting the urge to farm and keeping me company on the southern Kurzick side) and to Sera (for selflessly helping me get two teams of eight together in Jade Quarry.)
Notes:
Cantha 100% is A LOT easier to get than its Tyrian counterpart. Granted, I'm not a runner. I pushed through most of this with henchies. Henching your way around Canthan maps is much easier than henching around Tyrian maps, IMO. It may be harder to run the map than it was in Tryia.
I went through everything after Matuu Keep with the intention of mapping on my first visits. Perhaps because of this, it seemed a lot faster getting the Canthan map. (I didn't have to go back over areas I'd long moved past.)
Edges are still not as tricky as Tyria, but you should still test them. The Luxon and Kurzick areas have edges that uncover more map than the city. The edges of water, in the city, on the island, and in Raisu explorable uncover a fair amount that does count. So watch out for those.
Towns still count. Please note that I got 100% without ever going into any of the exclusive, alliance-controlled areas of towns. I didn't notice any exclusive area that looked like it would uncover more map than you could get to elsewhere. In the towns that count, don't forget the Shing Jae Arena outpost. You may not be able to fight in the arena, but any character can go to the outpost by talking to the Arena guard in the monestary. Also counted are both sides of Vizunah Square, foreign and local. You can gain access to the side you didn't get from a quest by helping someone with the Mayhem in the Market quest (local) or the Welcome to Cantha quest (foreign.)
EDIT - needing Vizunah Local may not be true anymore since the update that seemed to put that area underground. I've no way to test the theory anymore. :( I'm still pretty sure you'll need Vizunah Foreign though.
Most missions give you access to the map after completion, so you needn't be worried about mapping during missions. Exceptions are Vizunah Square, Nahpui, a small edge on the very south of the mission path when you first start Unwaking Waters (after the first afflicted group, hang a left and push the edges back there - you can't get to them from the explorable side,) and Imperial Sanctum.
I have one area on my map uncovered that you may not be able to get to on any character - the training area in Shing Jea Monestary. (All characters could access it during the Dragon Festival.) Luckily, I know there's more map available even if you can't get there - the banished areas during the Imperial Sanctum mission. I don't know how to make Shiro banish you to each one, but I had 100% on my map when I'd only been to one of the banish areas and hadn't yet pushed the edges of the center area where Shiro sits.
Lastly, and most unfortunately, you need the Fort Aspenwood and Jade Quarry PvP maps to complete grandmaster. Fort Aspenwood is usually busy enough to get into easily. For Jade Quarry, I had to go recruiting people from other towns to come make 8 people per side to start a game. When you get in, remember that you need map from both the Kurzick and Luxon bases. In both, I find the most hidden edge bits on the Luxon side. Study a complete map closely before you start these. Make sure you push the edges to uncover all of it.So, here are the maps. I took these as screenshots of my U mini-map (resized window.) Not only does this remove the town markers and interface, the U map doesn't have that moving cloud shadow effect.
I know there are some overlaps, but that's incredibly hard to avoid.
There are also places where sections of multiple overall regions are shown on one map. I've placed the maps below in the region they show most of, but understand there will be places where the city/forest/jade sea overlap.
I've tried to have every section of uncoverable map visible in at least one screenshot here. Please do let me know if you find that a specific edge or section is missing from any of my screenshots.
